Does anything say summer more than Wild Blackberries?
I don’t think so. We are lucky to have many wild vines here on The Butterfly Hill. This is the reciepe that I have used the most, after much trial and error. It’s very simple and easy to do with what ever amount of fresh summer fruit you have. It only has two ingredients, yea it takes a little time, but it’s so worth it!
Start by cleaning and lightly rinsing your fruit. Then put it in a pot and add sugar. Add enough that all fruit is covered. Let sit on the counter for 1 hour. Bring the pot bring to a boil, you want the entire pot to boil, frequently stirring. Then lower the heat to simmer for 10 minutes. Let cool completely. And repeat 4 times. Even if you leave it on the counter overnight, the sugar will preserve the fruit. Once you have boiled 4 times put straight into your sterile jars and can.
We use the preserves on toast. It’s also a great way to add flavor to smoothies. Serving with cheese and crackers or bread is a great way to eat your yummy jam. Also adding a teaspoon to tea is sooooo yummy. Give it a try!
