Delicata Squash

    This Season’s Favorite!

    Delicata squash is without a doubt this year’s favorite grow. I got a starter at a swap early this spring and put it in a pot in the vegetable garden. We got several fast-growing squash and ate them all so quickly, that I have been storing up on them at our local farm stand. You can preserve them by putting them in a cool space. My grandmothers used to put them in large metal tubs with straw in them and keep them all winter long. If you do this in the basement, make sure they are covered and protected, but not sealed as they need to breathe.

    Start by cutting off both ends of the squash and keeping them to put on the tray that you will dry your seeds on. This helps keep all the drying seeds straight!

    Cut the ends off first
    Next cut in half and harvest your seeds
    Cook at 350 till golden brown 20 to 30 minutes and enjoy!
